In order to guarantee my family is eating the best that we can provide, we decided to start making our own foods etc…one of the ways we are doing is making stuff from scratch. As we all know, everything homemade from scratch is always better than any store-bought item. Homegrown and homemade foods are definitely on that list.
As you know, I am a HUGE fan of Freecycle.org…and one of the many benefits of being a member….FREE homegrown organic produce. I was able to pick up over 5-lbs of organic cucumbers from a fellow Freecycle member. After I picked up the cucumbers, I had to figure out what to do with my new bounty. Just because we switched to the Paleo diet, doesn’t mean we have to give up Taco Tuesdays! We just have to switch it up a bit to fit the diet…This is a quick and easy meal that we eat almost weekly.
Paleo Beef Tacos
My son LOVES kale chips. It’s a good thing these are so simple to make! You will be HOOKED after you try them for the first time. My son asks for them every time he sees kale on sale at the grocery store.
If you want to try to make your own kale chips, you’re in luck….Organic Kale is on sale this week at Ralph’s stores for $0.99 each this week! Make sure you head on down and pick some up! Kale is now one of my vegetables. It is rich in nutrients and vitamins, like beta carotene, vitamin K, vitamin C, and calcium.

Paleo Egg Bacon Avocado Cups
During the school year, my family is known to just grab a bowl of cereal and eat it…without milk. I know, I know…not very “healthy”. I convinced myself that it was ok since the cereal wasn’t filled with sugar and at least organic. Well, with our new dietary changes to the Paleo diet…our breakfast meals had to change.
I figured summer would be the best time to “test” out new recipes since there was more time in our schedules. My son is currently in Baseball Camp which means we have an earlier than usual start time compared to his school schedule. So in order to ease the morning prep time….I decided to make these yummy Egg Bacon Avocado cups for this week’s breakfast meals.
As part of the health changes my family has been making this past year…we decided to start the Paleo Diet. Basically it is more of a lifestyle change and way of thinking than just a simple fad “diet”. Since my husband started in March, he’s lost around 15-20 lbs! And I’ve lost 5 just by switching to Paleo, and I’m not even trying! Anyway, I’ll write more later about our full Paleo switch later.
Anyway….this past weekend, I was able to score 3 HUGE heads of organic cabbage from a fellow Freecycle member! It was AWESOME! I just went to her house and was able to pick up the cabbage as well as other organic vegetables. I was SUPER excited that I didn’t need to go shopping this week thanks to this generous lady.
Thing is…my family doesn’t eat a lot of cabbage, short of the traditional corned beef & cabbage dish during the month of March. So my mission this week was to find a new cabbage recipe that fit into our new Paleo diet.
I think our society is a bit obsessed with snacks. We love the easy option to simply open up a package and immediately start munching on something oh so good, but not so good for you. Convenience is KING! My household is not immune.
My husband has repeatedly asked “where are all the snacks?”
Eating real food does takes a bit more effort than opening a pre-made store-bought package but it’s well worth the health of your family. I decided to take a stab at this and make my own homemade lara bars using a recipe I found on OhSheGlows.com
After dehydrating the bananas it only took 5 minutes to make these bars. The only change I would make is to add a pinch of salt.
